Shippable (Pune only)
This cake is special for two reasons. Firstly, it takes me back to all the birthday parties I went to as a kid (chole puri was the other permanent fixture - any small town 80's/90's kid will relate). Secondly, this was my mother's favourite cake. This would have been her 77th birthday so I can't think of a better time to put this up!
Although we took inspiration from a childhood memory, this cake is a far cry from the overly sweet sponge, fake tasting cream or canned pineapple & cherries. After several iterations, what we have landed on is simplicity itself.
Here a vanilla sponge gets filled with pineapple jelly made with fresh pineapple juice along with a chunky pineapple compote, allowing the natural tartness of the fruit to shine. The cake gets a generous crown of a simple & light vanilla cream optimally sweetened with white chocolate which rounds off the ensemble beautifully. Altogether it's sweet, slightly tart, buttery & downright addictive.
